The creation of pandoro in its modern form is credited to Domenico Melegatti, a Veronese pastry chef who, in 1894, registered its official patent. Melegatti not only perfected the recipe, lightening the dough through extended natural leavening, but also introduced the iconic eight-pointed star-shaped mould, designed by the Impressionist painter Angelo Dall’Oca Bianca.

This intuition turned pandoro into a symbol of elegance and visual harmony, destined to become a star on Italian and international festive tables. Since then, Verona’s pandoro has stood as an ambassador of artisanal tradition, uniting flavour, history and beauty.
